Ingredients

8 large eggs , lightly beaten
2/3 cup fat-free buttermilk
1 teaspoon salt
1/4 teaspoon vanilla extract
1 lb unsliced dense white bread ( like pullman ) or 1 lb egg bread , crusts removed and cut into 1-inch cubes ( challah )
4 tablespoons unsalted butter
1/2 pint fresh blueberries
1/2 pint fresh raspberry
2 bananas , sliced
warmed maple syrup ( optional )

Instructions

1.Combine the eggs, buttermilk, salt and vanilla extract in a large bowl and whisk well
2.Add bread cubes to the mixture and toss to fully coat
3.Heat a large skillet over medium high heat and add butter
4.Once the butter has melted, add the bread cubes and cook until well browned on each side for about 3 minutes
5.Take a skewer and assemble the kebobs by alternating berries, bananas and French toast cubes onto the skewer until you reach the end
6.Serve with warm maple syrup on the side for an optional drizzle.
