Ingredients

6 perch fillets
3 fennel bulbs , cut into quarters , reserving the fennel fronds for a garnish
3 tomatoes , peeled and cut into quarters
3 shallots , peeled and finely chopped
1 red pepper , trimmed and cut into chunks

1 teaspoon coriander seed
1 tablespoon olive oil
1 teaspoon fennel seed
1 cup dry white wine , such as colombard
2 lemons , 1 sliced and 1 cut into wedges

Instructions

1.Preheat your oven to 200°C/400°F.
2.In a baking dish, mix together the fennel, tomatoes, shallots, red pepper, coriander seed, olive oil, and fennel seed. Season with salt and pepper to taste.
3.Pour the white wine over the top of the vegetables, then arrange the perch fillets on top of the vegetables.
4.Sprinkle the dill over the fish and vegetables, and place the lemon slices on top.
5.Cover the dish with foil and place in the oven.
6.Bake for 20-25 minutes or until the fish is cooked through and the vegetables are tender.
7.Serve hot with lemon wedges and garnished with fennel fronds.
