Ingredients

900 g large waxy potatoes , such as Desiree
1 1/4 liters milk , low-fat is fine
3 garlic cloves , crushed and finely chopped
450 g natural yoghurt , Greek-style
salt & freshly ground black pepper
1 pinch nutmeg , grated
100 g cheddar cheese , grated
2 tablespoons fresh flat leaf parsley , finely chopped , to garnish

Instructions

1.Preheat the oven to 180°C/350°F/gas 4. Grease a large baking dish.
2.Peel the potatoes and slice them thinly.
3.Place the milk and garlic in a large saucepan, bring to a boil and simmer for 5 minutes.
4.Add the potatoes to the milk, along with some salt, black pepper and nutmeg, and simmer for 10 - 15 minutes, until the potatoes are tender.
5.Using a slotted spoon, transfer the potatoes to the prepared baking dish.
6.Mix the yoghurt and cheddar cheese together and pour over the potatoes.
7.Bake for 30 minutes until golden brown.
8.Serve sprinkled with chopped parsley.
