Ingredients

1 cup sugar
1 cup water
1 1/2 1/2 cup raspberries or 2 cups strawberries
crushed ice
1/4 part berry syrup ( recipe above )
sparkling water or seltzer water
half-and-half cream

Instructions

1.In a small saucepan, combine the sugar, water, and raspberries or strawberries and bring to a boil, stirring occasionally.
2.Reduce heat to low and simmer for 10-15 minutes, until the berries break down and the mixture thickens slightly. Strain through a fine-mesh sieve and let cool.
3.Fill a tall glass with crushed ice and add 1/4 part berry syrup ( recipe above ).
4.Top with sparkling water or seltzer water and pour half-and-half cream over the soda, stirring gently to combine. Serve immediately.
