1 tablespoon of fresh mint , finely chopped
1/2 cup Greek yogurt
3 large eggs
1/4 teaspoon pure vanilla extract
1/2 cup extra virgin olive oil
1/2 cup citrus marmalade , strained
1 teaspoon water
