Ingredients

1 1/2 tablespoons salted butter
1 bag Simply Potatoes Mashed Sweet Potatoes
1 lb tail-on medium raw shrimp
1 package andouille sausages
2 medium green tomatoes or 2 medium tomatillos , if green tomatoes are not available

Instructions

1.Preheat the oven to 350°F.
2.Grease a heavy 9-inch baking pan with the salted butter.
3.Spread the Simply Potatoes Mashed Sweet Potatoes evenly into the bottom of the pan.
4.Slice the Andouille sausages into small pieces and arrange them in a circular pattern over the sweet potatoes.
5.Rinse and dry the raw shrimp, then place them on top of the sausages.
6.Thinly slice the green tomatoes (or tomatillos) and place them on top of the shrimp, in a decorative pattern if you prefer.
7.Bake the cake for 50-60 minutes, or until the shrimp are cooked through and the sweet potatoes are golden brown. Let the cake cool for 10 minutes before serving.
