3 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons fresh mint leaves , finely chopped
3 green onions , finely chopped

Instructions

1.In a large saucepan, bring the water, onion, cloves, Puy lentils, lemon slice and zest, garlic cloves, bay leaf and cumin to a boil.
2.Reduce heat to low and simmer, uncovered, for 25-30 minutes or until lentils are tender. Drain well.
3.Discard the onion slice, lemon slice and bay leaf and transfer lentils to a large bowl.
4.In a small bowl, whisk together the balsamic vinegar, olive oil, lemon juice, mint leaves and green onions.
5.Pour the dressing over the lentils and toss well. Serve the salad at room temperature or chilled.
