1 whole chickens , cut into 8 pieces
2 slices bacon , diced
1 medium onion , peeled and diced
2 large carrots , peeled and diced
2 sprigs fresh thyme
2 garlic cloves , smashed
1 cup madeira wine
2 cups chicken stock

2 tablespoons sugar
12 white pearl onions , peeled
15 baby carrots , peeled ( see note )

Instructions

1.Preheat oven to 400 degrees F (200 degrees C).
2.In a large oven-safe skillet, cook bacon over medium heat until crispy, about 5 minutes. Remove bacon from skillet and set aside.
3.Add onion, diced carrots, thyme, and garlic to the skillet. Cook until vegetables are tender, about 5 minutes.
4.Add madeira wine, chicken stock, and chicken pieces to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, or until chicken is cooked through.
5.Remove chicken pieces from skillet and set aside. Discard thyme sprigs.
6.In a separate pot, bring salted water to a boil. Add pearl onions and baby carrots and boil for 3 minutes. Drain.
7.In the same skillet used to cook the chicken, melt butter and sugar together over medium heat. Add cooked bacon, pearl onions, baby carrots, and sliced shiitake mushrooms. Cook for 5 minutes.
8.Stir in the cooked chicken and remove skillet from heat.
9.Roll out puff pastry sheets and use them to cover the chicken mixture in the skillet, making sure to tuck the edges of the pastry down into the sides of the skillet.
10.Brush pastry with egg yolks and bake in the preheated oven for about 20 minutes, or until pastry is golden brown and chicken pot pie is heated through.
