The French Pot Roast is a classic dish that originated in the French countryside. In French, it is called "boeuf en pot-au-feu," which translates to "beef in pot on the fire." The dish is made by slow-cooking a beef roast with vegetables and aromatics in a flavorful broth until tender and succulent. In France, the dish is often served with crusty bread or baguette and a glass of red wine. It is a common Sunday dinner meal that brings families together around the table. In the United States, the French Pot Roast is a popular dish for special occasions, holidays, and potlucks. It is a comforting and satisfying meal that will warm you up on a cold winter's day.

Instructions

.Sprinkle the beef roast with salt and black pepper on all sides.
.Heat the olive oil in a large skillet over high heat. When the oil is hot, add the beef roast and sear on all sides until browned, about 4-6 minutes per side.
.Transfer the seared beef roast to a slow cooker.
.Add the chopped onion, diced carrot, and minced garlic to the same skillet and cook over medium-high heat until tender and fragrant, about 4-5 minutes.
.Pour the red wine into the skillet and use a wooden spoon to scrape any browned bits from the bottom of the skillet. Cook for 1-2 minutes, then pour the wine and onion mixture over the beef roast in the slow cooker.
.Add the beef broth, balsamic vinegar, and herbs de Provence to the slow cooker. Cover and cook on low for 8-10 hours or high for 4-6 hours, until the beef roast is tender.
.In a small bowl, mix together the butter and flour until a smooth paste forms. Spoon the paste into the slow cooker and whisk gently to combine. Cook on high for an additional 30 minutes, until the gravy is thickened.
.Serve the French Pot Roast with pureed potatoes, rice, or cooked noodles.
