Ingredients

3 egg whites
2 tablespoons caster sugar ( Aussie tablespoon is 4 teaspoons )
pink food coloring , a few drops
1 1/4 cups icing sugar ( do not use icing sugar mixture )
1 cup almond meal ( ground almonds )
2 tablespoons icing sugar , extra
100 g white eating chocolate , chopped coarsely
2 tablespoons thickened cream
French Pink Macaroons are a classic French dessert that have enjoyed a resurgence in popularity in recent years. These tasty treats are made with ground almonds, egg whites, and powdered sugar, and are filled with a delicious white chocolate ganache. Instructions

1.Preheat the oven to 150°C (130°C fan-forced) and line 2 trays with baking paper.
2.Beat the egg whites in a medium bowl with an electric mixer until soft peaks form.
3.Gradually add caster sugar in 3 batches, beating until the mixture is thick and glossy. Add pink color and beat until combined.
4.Fold in icing sugar and almond meal in batches until the mixture is just combined, do not over mix. Spoon the mixture into a piping bag with 1 cm round tube.
5.Pipe 3 cm rounds onto trays, leaving 3 cm between each round to allow for spreading. Tap trays on bench firmly 3-4 times to remove air bubbles.
6.Sprinkle rounds with extra icing sugar and let them stand at room temperature for 20 - 30 minutes or until the surface of the rounds is no longer sticky to the touch. This helps to form a crust.
7.Bake the macaroons for 15 to 20 minutes, or until firm.
8.Cool on trays.
9.In a small saucepan, combine chocolate and cream and cook, stirring, on low heat until mixture is smooth. Cool slightly before assembling macaroons.
