Instructions

1.Preheat oven to 400°F.

7.Bake 20 minutes, then reduce oven to 350°F and bake 25-30 minutes more or until puffed and golden-brown.
8.Remove from oven and pierce each eclair once with a skewer to allow steam to escape.
9.Cool on a wire rack.
10.Meanwhile, bring sugar, water, and 1/8 teaspoon salt to a simmer in a small saucepan over medium-high heat, stirring until sugar is dissolved.
11.Add 1/4 cup butter and stir until melted and smooth.
12.Remove from heat and stir in bourbon or dark rum.
13.Cut peaches into thin slices and toss with 1 tablespoon sugar.
14.In a large bowl, beat cream, remaining 1 tablespoon sugar, and bourbon or dark rum until stiff peaks form.
15.Slice eclairs in half horizontally and fill with whipped cream and peaches.
16.Drizzle with glaze and serve chilled.
