French onion soup (Soupe á L'oignon Gratinée) is a classic French dish that originated in the Roman times. It has since become a staple in French cuisine and is enjoyed around the world. This hearty soup is made from caramelized onions that are slow-cooked until they are brown and jammy, then simmered in a rich broth made from chicken stock and flavored with sherry and thyme. The soup is traditionally served topped with a slice of baguette and a generous amount of melted Gruyere cheese.

Instructions

1.Melt butter in a large Dutch oven over medium heat. Add onions and 1 teaspoon salt and stir to coat. Cover and cook, stirring occasionally, until onions have released their moisture and are soft and wilted, about 30 minutes.
2.Increase heat to high and continue to cook, stirring frequently, until onions are well browned, about 30 minutes longer.
3.Add 4 3/4 cups water, chicken broth, thyme, bay leaf, and sherry and bring to a simmer. Simmer for 30 minutes. Skim any foam or fat from the surface as necessary.
4.Adjust seasoning with salt and pepper to taste.
5.Preheat broiler. Arrange baguette slices on a foil lined baking sheet and top with shredded cheese. Broil until cheese is melted and bubbly, 3 to 5 minutes.
6.Ladle soup into individual bowls and top each with a slice of cheesy baguette. Serve immediately.
