Ingredients

10 sweet onions ( like Vidalias ) or 10 a combination of sweet and red onions
3 tablespoons butter
1 teaspoon salt
2 cups white wine
10 ounces canned beef consomme
10 ounces chicken broth
10 ounces apple cider ( unfiltered is best )
bouquet garni , thyme sprigs , bay leaf and parsley
1 loaf country bread
kosher salt
ground black pepper
1 dash cognac ( optional )
1 cup fontina or 1 cup gruyere cheese , grated

Instructions

1.Thinly slice the onions and place them in a 5-quart Dutch oven over medium heat along with the butter and salt.
2.Cook the onions for 45 minutes to an hour, stirring occasionally until they are caramelized, deep brown and sweet.
3.Pour in the white wine, scraping the bottom of the pot with a wooden spoon and let it simmer for a few minutes.
4.Add the beef consomme, chicken broth, apple cider, and bouquet garni. Bring to a simmer, and cook for another 45 minutes to an hour.
5.Preheat oven to 375°F (190°C).
6.Cut the loaf of bread into 1-inch slices and toast them on a baking sheet in the oven until they are crisp. Set aside and keep warm.
7.Discard the bouquet garni from the soup and season to taste with salt, pepper, and cognac (if using).
8.Ladle the soup into individual bowls and place a slice of toasted bread on top of the soup. Sprinkle with the grated cheese.
9.Broil the soup on the top rack of the oven until the cheese is melted and bubbly.
