Instructions

.In a large bowl, mix together ground chuck, minced fresh parsley, minced scallions, kosher salt, and black pepper, being careful not to overwork the meat.
.Divide the meat into four equal portions, and shape the portions into oval-shaped patties, about 4-5 inches long and 3/4 inch thick.
.Heat olive oil in a large skillet over medium-high heat, add the patties and cook for about 3 minutes each side or until browned.
.Remove the patties and set them aside on a plate or tray.
.Add sliced onions and a teaspoon of sugar to the skillet and cook for about 10 minutes or until caramelized.
.Stir in minced garlic and tomato paste and cook for about 1-2 minutes.
.Add flour, beef broth, dry red wine, kosher salt, and dried thyme leaves to the skillet, stirring until the sauce thickens.
.Add the patties back in the skillet and spoon the onion gravy over them. Cook until the patties are cooked to your desired doneness.
.Toast the cheese toast as per the instructions provided on the package or make your own cheese toast. Place a cheese toast on each serving plate, then top each with a patty and spoon onion gravy over it. Finally, garnish each plate with minced fresh parsley and shredded parmesan cheese.
