Instructions

1.In a large bowl, rinse all the beans and peas and remove any debris or bad beans.
2.In a large pot, bring 3 quarts of water and 2 bay leaves to a boil.
3.Add in the rinsed beans and peas and cook for 3 minutes.
4.Remove from heat and let the beans soak for 1-2 hours.
5.After soaking, drain and rinse the beans and peas.
6.In a large Dutch oven or soup pot, heat the olive oil over medium heat. Add the onion, celery, garlic, and thyme. Cook until the vegetables are slightly softened but not browned, about 5 minutes.
7.Add the soaked beans and peas, diced tomatoes, and chicken broth to the pot.
8.Bring to a boil, then reduce the heat and let the soup simmer for 2 hours, or until the beans are tender.
9.Season with salt and pepper to taste.
