2 1/2 cups diced carrots
2 1/2 cups chopped celery
8 garlic cloves , minced
6 ounces tomato paste
1 cup beef broth
1 1/2 cups red wine
2 bay leaves
1/4 cup chopped scallion ( optional )
1 tablespoon water
1 tablespoon cornstarch

Instructions

1.Preheat oven to 350°F/175°C.
2.Season beef short ribs with salt and pepper.

4.Brown short ribs on each side, about 3-4 minutes per side. Remove from pot and set aside.
5.Add onion, carrots, celery, and garlic to the pot and sauté until onion is translucent.
6.Add tomato paste and stir until well combined.
7.Add beef broth, red wine, and bay leaves. Stir well.
8.Return beef short ribs to pot and turn to coat in sauce.
9.Cover tightly with a lid or foil and bake in oven for 3-4 hours, or until meat is tender and falling off the bone.
10.Once finished cooking, remove short ribs from pot and set aside. Discard bay leaves.
11.Mix together cornstarch and water, and mix into pot of sauce.
12.Bring sauce to a boil and stir until thickened to desired consistency. Serve with short ribs and garnish with chopped scallions, if using.
