Ingredients

4 bone-in skin-on chicken breast halves

1 tablespoon vegetable oil
1 box frozen artichoke hearts , thawed
1/2 cup low sodium chicken broth
2 tablespoons honey
2 teaspoons herbes de provence ( see note )
4 tablespoons unsalted butter , cut into 4 pieces
2 teaspoons white wine vinegar ( see note )

Instructions

1.Preheat oven to 425 F
2.Season chicken with salt and pepper
3.In a large oven-safe skillet, heat oil over medium-high heat and brown chicken on both sides
4.Remove chicken from skillet and add thawed artichokes to the same skillet
5.Add chicken broth, honey, and herbes de provence to the skillet, stirring to combine
6.Add chicken back to the skillet skin side up
7.Bake in preheated oven for 20-25 minutes, or until chicken is cooked through and artichokes are tender
8.Remove skillet from oven and transfer chicken and artichokes to a plate. Set skillet back on stove over medium heat
9.Add butter and white wine vinegar, whisking until sauce thickens slightly
10.Serve chicken and artichokes with sauce drizzled on top
