3/4 lb onion , peeled and thinly sliced ( resulting to 4 cups )
8 cloves garlic , peeled and thinly sliced
1/2 cup dry white wine
2 tablespoons finely chopped fresh cilantro ( coriander or Chinese parsley )
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Instructions

1.In a heavy-bottomed pan, heat corn oil over medium-high heat.
2.Add chicken thighs to the pan and cook for 4-5 minutes on each side, until browned and crispy.
3.Remove the chicken from pan and set aside.
4.In the same pan, add onion and garlic and sauté for 5-7 minutes, until they become soft and translucent.
5.Add white wine to the pan and scrape the bottom to deglaze it. Let the wine reduce by half.
