Instructions

.In a small bowl, combine the boiling water and 10-grain cereal. Mix well and set aside to cool.
.In a large bowl, mix together the lukewarm water, olive oil, honey (or brown sugar), and salt. Add the white-wheat flour, whole wheat flour, bread flour, vital wheat gluten (if using), and instant yeast. Mix until the dough comes together.
.Add the cooled cereal mixture and knead the dough by hand or with a stand mixer until it is smooth and elastic.
.Place the dough in a greased bowl, cover with a damp towel or plastic wrap, and let it rise in a warm, draft-free place until it has doubled in size (about 1 hour).
.Preheat the oven to 425°F and place a shallow pan of water on the bottom rack. This will create steam and help the bread develop a crust.
.Punch down the dough and shape it into a long loaf. Place the loaf on a baking sheet or a loaf pan and let it rest for 10-15 minutes.
.Score the top of the loaf with a sharp knife or a razor blade. This will help the bread expand while it bakes.
.Bake the bread for 20-25 minutes, or until it is golden brown and sounds hollow when tapped. Cool completely before slicing and serving.
