Ingredients

2 small plum tomatoes
1 green onion ( green part only )
1/3 cup crumbled blue cheese
1 teaspoon olive oil
1 pinch salt and pepper
2 teaspoons Dijon mustard
2 -3 pinches dried rosemary
4 small minute steaks or 2 large inside round steaks
Pam cooking spray

Instructions

1.Preheat oven to 450°F.
2.Cut tomatoes in half lengthwise and place on a baking sheet lined with foil.
3.Drizzle with olive oil and sprinkle with salt and pepper. Place in the oven and roast for 10-12 minutes.
4.Meanwhile, in a small bowl, mix together the Dijon mustard and dried rosemary.
5.Heat a medium-size skillet over medium-high heat and spray with Pam cooking spray.
6.Season steaks with salt and pepper and sear them for 1-2 minutes on each side until desired doneness.
7.Once steaks are done, remove from heat and smear the Dijon mustard mix generously over each steak.
8.Serve steaks with roasted tomatoes, topped with crumbled blue cheese and chopped green onion.
