1 teaspoon instant yeast ( plus a lttle )

Instructions

1.In a large mixing bowl, combine 480g bread flour and 480g water and the sourdough yeast. Mix well.

3.In a separate mixing bowl, combine 665g bread flour, water, and malt extract, if using. Mix well.
4.Add the salt and instant yeast, and continue mixing until well combined.
5.Add the sourdough mixture to the flour mixture and knead together until a smooth dough forms. Cover and let it rest for 20-30 minutes.
6.Divide the dough into 3-4 pieces and shape each piece into a long, thin baguette shape.
7.Place the baguettes on a baking sheet lined with parchment paper and allow them to rise for another 30 minutes.
8.Slash the top of each baguette with a razor or sharp knife and bake in a preheated oven at 440°F for 25-30 minutes.
