Ingredients

7 ounces firm tofu
2 small tomatoes , thinly sliced
1 tablespoon olive oil or 1 tablespoon vegetable oil

1/3 cup mayonnaise or 1/3 cup vegan mayonnaise
1 tablespoon fresh rosemary , chopped or 1 teaspoon dried rosemary , crushed
8 slices whole wheat bread
1/4 cup prepared pesto sauce
1/4 cup sliced marinated mushrooms
1/4 cup radish sprouts

Instructions

1.Drain the tofu and cut it into 1/2 inch slices.
2.Heat the oil in a frying pan over medium heat and add the tofu slices. Cook until golden brown on both sides, about 8 minutes.
3.Season the tofu with salt and pepper to taste.
4.In a small bowl, mix together the mayonnaise and rosemary.
5.Toast the bread slices and spread each slice with the mayonnaise mixture.
6.On 4 slices of bread, lay down the sliced tomatoes, followed by the sliced mushrooms and radish sprouts.
7.Add a slice of tofu to each sandwich, followed by a spoonful of pesto sauce.
8.Top with the remaining slices of bread.
