1 tablespoon unsalted butter , softened
2/3 cup whole unblanched almond , toasted ( about 3 ounces )
2/3 cup all-purpose flour
1/2 cup sugar
1/4 teaspoon fine salt
1/4 teaspoon ground cinnamon
2 large egg yolks
1/2 teaspoon almond extract
1 -2 tablespoon whole milk
confectioners ' sugar
Fregolata is a crumbly and rustic cookie from Northern Italy, particularly the Veneto region. It's traditionally made during the Christmas season and served with a glass of sweet wine. The recipe for Fregolata may vary from one family to another, but it typically contains toasted almonds, flour, sugar, and butter or lard. Fregolata has a unique texture and taste that make it a beloved Italian treat.

Instructions

1.Preheat oven to 350 degrees F. and set the oven rack at the middle position.
2.Grease an 8-inch square baking pan with butter.
3.In a food processor, grind the toasted almonds until finely ground but not pasty.
4.Add the flour, sugar, salt, and cinnamon and pulse a few times until combined.
5.Add the egg yolks, almond extract, and 1 tablespoon of the milk. Pulse until the mixture starts to clump, adding the additional tablespoon of milk if necessary to form a cohesive dough.
6.Using the palms of your hands, firmly press the mixture into the prepared pan in an even layer.
7.Bake for 25-30 minutes, or until light golden and set on top.
8.Cool the Fregolata in the pan set on a wire rack. Once cool, slice the cookie into squares or diamond shapes and dust with confectioners' sugar before serving.
