Ingredients

1 1/4 lbs lean ground beef
1 medium onion , diced ( about 3/4 cup )
3 -4 tablespoons taco seasoning
1/2 teaspoon salt ( to taste )
1/4 teaspoon pepper ( to taste )
1 can mild green chilies , chopped
1 can green chili salsa
1/4 - 1/3 cup water
12 corn tortillas
1 lb cheddar cheese or 1 lb monterey jack cheese , grated- less if desired
1 can mild red chile enchilada sauce
1 can medium green enchilada sauce
1/3 cup sour cream
3 tablespoons cream or 3 tablespoons milk

This casserole is made with layers of corn tortillas, seasoned ground beef, green chilies, fire-roasted tomato salsa, and plenty of melty cheese. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Brown the ground beef and onion together in a large skillet over medium-high heat until the beef is fully cooked through. Drain excess grease.
3.Add taco seasoning, salt, pepper, green chilies, green chili salsa, and water to the skillet and stir until well combined.
4.Reduce the heat to medium-low and let simmer for 10 to 15 minutes.
5.Meanwhile, spray a 9x13 inch baking dish with cooking spray. Layer 6 corn tortillas on the bottom of the dish, overlapping slightly if necessary.
6.Top the tortillas with half of the beef mixture in the skillet. Sprinkle half of the grated cheese over the beef. Drizzle with half of the red enchilada sauce and half of the green enchilada sauce. Repeat layers.
7.Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
8.Remove foil, sprinkle remaining cheese on top, and return to oven, uncovered, for an additional 15-20 minutes or until cheese is melted and casserole is heated through.
9.Optional: garnish with sour cream and additional green onions.
