Ingredients

3 -4 cups shredded cooked chicken
2 tablespoons butter or 2 tablespoons margarine
1 medium white onion , chopped
1 -2 garlic clove , pressed
1 can of chopped green chilies
1 can whole green chilies , sliced in thin strips
1 green bell pepper , finely chopped
5 tomatoes , skinned and chopped ( I do n't remove the skin when I do n't have the time )
2 tablespoons fresh cilantro
1 cup chicken broth
1/8 teaspoon cumin
12 large flour tortillas
3/4 lb monterey jack cheese , cut into 1/4 inch strips lengthwise into strips
2 cans cream of mushroom soup ( can use lower fat version )
1/2 cup heavy cream or 1/2 cup half-and-half cream
1 -2 cup longhorn cheese or cheddar cheese , shredded

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, melt butter and sauté onions until transparent.
3.Add garlic, green chilies, bell pepper, tomatoes, and cilantro to the skillet, and sauté until the vegetables are soft.
4.Add the chicken broth and cumin to the skillet and mix well.
5.In a 9x13 inch baking dish, coat the bottom with some of the soup mixture.
6.Fill the tortillas with the chicken mixture and strips of Monterey Jack cheese down the center of each tortilla, and roll up.
7.Place the enchiladas seam-side down in the baking dish.
8.In a medium bowl, mix together the cream of mushroom soup and heavy cream, and pour over the enchiladas.
9.Top with Longhorn cheese or cheddar cheese.
10.Cover with foil and bake for 45-50 minutes.
11.Uncover and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
12.Serve hot and enjoy!
