Ingredients

1/4 cup all-purpose flour

1 medium eggplant , peeled and cut crosswise in 1/2-inch thick slices
1 egg , beaten
1/4 cup vegetable oil

1 package mozzarella cheese
tomato sauce ( recipe below )
1/2 cup chopped onion
1/4 cup chopped celery
1 small garlic clove , minced
2 tablespoons vegetable oil
1 can tomatoes , cut up
1/3 cup tomato paste
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon parsley flakes
1/2 teaspoon dried oregano , crushed
1 bay leaf

Instructions

1.In a shallow dish, mix together the flour and salt.
2.Dip each slice of eggplant into the beaten egg, then dredge in the flour mixture until well coated.

4.Fry the eggplant slices in the hot oil until golden brown on both sides. Remove from the pan and set aside.

8.In a greased 9x13 inch baking dish, layer the fried eggplant slices, tomato sauce, parmesan cheese, and mozzarella cheese, repeating until all ingredients are used up.
9.Bake in the preheated oven for 30 minutes, or until the cheese is golden and bubbly.
