Ingredients

1 large chicken
1 large onion
4 slices bacon or 1/3 cup ham
4 garlic cloves
salt , to taste
pepper , to taste
10 -20 green olives
5 small canned tomatoes , without juice
2 tablespoons Dijon mustard
1 tablespoon butter , melted
1 cup brandy
2 tablespoons cornstarch
1/4 cup water
Frango Na Pucara, also known as Chicken in Bean Pot, is a hearty, comforting dish that has been enjoyed in Portugal for generations. Instructions

1.Preheat oven to 375°F (190°C).
2.In a pot over medium-high heat, sear the chicken until golden brown on all sides. Take chicken out of the pot and set aside.
3.Sauté the onion, bacon, and garlic in the same pot over medium heat for about 5 minutes, or until onions become translucent.
4.Add green olives, canned tomatoes, Dijon mustard, butter, salt, and pepper to the pot. Mix well.
5.Add brandy into the pot and let it cook for 2-3 minutes, being sure to scrape up any browned bits on the bottom of the pot.
6.In a small bowl, mix cornstarch and water together until the cornstarch dissolves. Add this mixture to the pot and stir well.
7.Bring the mixture to a simmer, then place chicken back into the pot.
8.Cover the pot with a lid and place it into the oven. Bake for 45 minutes to 1 hour, or until chicken is fully cooked and tender.
