Ingredients

1 dozen tortilla
1 lb extra lean ground beef
1 can black olives , chopped
1 bunch green onion , chopped including tops
1 lb medium cheddar , grated
1 can enchilada sauce ( larger can is okay )
16 ounces sour cream

Instructions

1.Brown the ground beef in a skillet over medium heat. Drain any excess fat.
2.Stir in half of the can of enchilada sauce and heat thoroughly.
3.Spread a spoonful of the remaining enchilada sauce on each tortilla.
4.Add the beef mixture, green onions, black olives, and grated cheese to each tortilla, and roll up.
5.Place the rolled tortillas seam-side down in a greased 9x12 inch casserole dish.
6.Mix the sour cream with the remaining enchilada sauce, and pour over the top of the enchiladas.
7.Bake in a preheated 375 degree F (190 degree C) oven for 20 to 25 minutes or until hot and bubbly.
