Ingredients

1 lb sirloin steak , thinly sliced
4 carrots , scraped and cut thin
1 cup raw broccoli floret
1 red pepper , sliced thinly
1 yellow pepper , sliced thinly
1 cup bok choy , chopped roughly
1/2 cup frozen orange juice concentrate , thawed
2 tablespoons hoisin sauce
1 tablespoon Thai red curry paste
1 tablespoon minced fresh gingerroot
2 tablespoons oyster sauce
salt
freshly ground black pepper
1 bunch green onion , chopped in 1-inch pieces
sesame oil , to drizzle

Instructions

1.Heat the olive oil in a wok or large frying pan over medium-high heat.
2.Add the sirloin steak and stir-fry for about 2 minutes, or until lightly browned.
3.Add the carrots, broccoli florets, red and yellow peppers, and bok choy to the pan.
4.Stir-fry for about 5 minutes or until the vegetables are crisp-tender.
5.In a small bowl, whisk together the orange juice concentrate, hoisin sauce, red curry paste, gingerroot, oyster sauce, salt, and pepper.
6.Pour the sauce over the vegetables and beef, and continue to stir-fry for another 2-3 minutes, or until heated through.
7.Remove from heat, top with chopped green onions and drizzle sesame oil over the top for added flavor.
