2 lbs ground lamb
2 onions , roughly chopped
1/2 ounce fresh gingerroot , in one piece
2 garlic cloves , roughly chopped

6 large tomatoes , roughly chopped

2 1/2 cups beef broth
7 ounces dried apricots , chopped
2 ounces cilantro , leaves only , roughly chopped
2 red onions , roughly chopped

2 lbs sweet potatoes , peeled and cut into chunks
2 ounces butter
2 lbs potatoes , peeled and cut into large chunks
cumin seed , toasted , to serve

Instructions

1.Preheat the oven to 350°F (180°C).

5.Boil the sweet potatoes and regular potatoes separately in salted water until tender, then drain them.
6.Preheat the broiler.

8.Transfer the lamb mixture to a large baking dish, and spread the mashed potatoes evenly over the top of the lamb mixture.
9.Broil the dish for 3-5 minutes, until the top of the potatoes is browned and crispy.
