Ingredients

6 cups milk
1/3 cup basmati rice ( or any long-grain rice )
1/2 cup milk
1/4 cup blanched almond
1/2 cup mashed ripe banana
3 tablespoons sugar
1/4 teaspoon ground cardamom
1/4 teaspoon saffron thread
3 tablespoons coarsely ground raw unsalted pistachio nuts

Instructions

1.Wash and soak rice in water for 30 minutes.
2.Bring milk to a boil in a heavy-bottomed pan and add soaked rice to it.
3.Reduce heat and cook the rice for 40-50 minutes until it is soft and fully cooked while stirring occasionally to prevent sticking to the bottom of the pan.
4.Add 1/2 cup milk, blanched almonds, mashed bananas, sugar, ground cardamom, and saffron.
5.Continue cooking for another 10-15 minutes until the mixture thickens, stirring occasionally.
6.Remove from heat and let it cool for a few minutes.
7.Serve the Kheerni garnished with raw, unsalted pistachio nuts.
