Ingredients

100 g red beans
100 g aubergines
1 star anise
4 cloves
4 cardamom
1 bay leaf
4 bird 's eye chilies
1 teaspoon cooking salt
1/3 teaspoon turmeric powder
1 teaspoon mustard
1 teaspoon cumin
1 teaspoon black beans ( split and de-skinned )
1 tablespoon cooking oil
Fragrant Red Bean With Aubergines, known as ‘Xiāng Hóng Shāo Qiézi’ in Chinese, is a popular vegetarian dish in China. It’s a versatile dish that can be served as a main course or as a side dish. Instructions

1.Soak red beans in water for at least 8 hours.
2.Boil red beans in a pot with 2 cups of water until they are soft and fully cooked.
3.Drain the water off and set aside.
4.Cut aubergines into long stripes.
5.Heat up 1 tablespoon of cooking oil in a pan, add star anise, cloves, cardamom, and bay leaf over low-medium heat.
6.Add bird's eye chilies, mustard, cumin, black beans, and turmeric powder. Fry for 1 minute or until fragrant.
7.Add aubergines and cook until soft.
8.Mix in cooked red beans until heated through.
9.Add salt and stir well.
10.Remove from heat and it’s ready to serve.
