Ingredients

1/4 teaspoon nutmeg , grated

1 teaspoon salt
2 garlic cloves , crushed
1 teaspoon gingerroot , grated
1/2 cup orange juice ( or 1-2 oranges juiced )
1/2 cup raisins
1/2 cup couscous
1/4 cup boiling water ( or more )
1 onion , finely chopped
500 500 g minced chicken or 500 g ground lamb
2 carrots , grated
1/8 cabbage , finely shredded
1 red capsicum , finely diced ( pepper )
1/4 cup slivered almonds ( lightly toasted , or substitute with crushed nuts )
1/4 cup pine nuts ( lightly toasted )
1 tablespoon oil

Instructions

1.Preheat a large frypan or wok to medium-high heat.

5.Add the nutmeg, clove, black pepper, cinnamon, ground cardamom, cayenne or paprika, cumin, turmeric, curry powder, and salt. Stir to combine.
6.Add the grated carrot, cabbage, and diced red capsicum. Stir to combine.
7.Add the orange juice and raisins, stir to combine.
8.Reduce heat and simmer for 5-10 minutes, allowing the flavours to meld.
9.Meanwhile, prepare the couscous. In a bowl, mix the couscous with the boiling water, cover and let stand for 5 minutes. Fluff with a fork.
10.To serve, divide the couscous among four bowls topped with the fragrant Moroccan spiced mince. Garnish with toasted almonds and pine nuts.
