Ingredients

12 lasagna noodles ( not no-boil )
2 tablespoons olive oil
2 garlic cloves , minced
16 ounces frozen chopped spinach , Thawed & Drained
1 large egg , Beaten
15 -16 ounces ricotta cheese
4 ounces goat cheese
3/4 cup parmesan cheese or 3/4 cup romano cheese , Divided
3 cups mozzarella cheese , Shredded
1 pinch nutmeg , Freshly Grated
1 pinch cayenne pepper
salt & pepper , To Taste
4 cups tomato sauce , homemade or jarred , your choice

Instructions

1.Preheat your oven to 375 degrees F. Cook lasagna noodles according to package instructions, and then drain and set aside.
2.In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, then add thawed and drained spinach and cook until heated through. Set spinach mixture aside.
3.In a separate bowl, mix together beaten egg, ricotta cheese, goat cheese, 1/2 cup of Parmesan or Romano cheese, 2 cups of mozzarella cheese, nutmeg, cayenne pepper, salt, and pepper.
4.Spread a thin layer of tomato sauce in the bottom of a 9x13 inch baking dish. Layer 3 lasagna noodles over the sauce. Add half of the spinach mixture, then half of the cheese mixture on top. Repeat layers of tomato sauce, noodles, spinach, and cheese mixture. Finish with a layer of noodles and tomato sauce, then sprinkle remaining Parmesan or Romano cheese and mozzarella cheese on top.
5.Cover dish with foil and bake for 25 minutes. Remove foil and bake for an additional 25-30 minutes, or until the top is golden and bubbly.
6.Remove lasagna from the oven and let it cool for 5-10 minutes before serving.
