Ingredients

1 large onion , diced fine ( or shredded )
1 lb mushroom , sliced ( optional )
1/2 cup butter or 1/2 cup margarine
1/2 cup flour
4 cups milk
1 1/2 cups parmesan cheese , grated
salt and pepper
1 lb ricotta cheese
4 ounces mozzarella cheese , diced
1/2 cup romano cheese , grated
1/4 cup walnuts , finely chopped
1/4 cup fresh parsley , chopped
3 eggs
1 dash nutmeg

Instructions

1.Preheat oven to 350°F (175°C).
2.Cook manicotti for 8-10 minutes or as per package instruction, drain and place in cold water.

5.Gradually add milk and whisk until smooth. Bring to a boil.
6.Cook for 2 minutes or until thickened, stirring constantly. Remove from heat.
7.Stir in Parmesan cheese.
8.In a medium bowl, beat eggs.
9.Add ricotta cheese, mozzarella cheese, Romano cheese, walnuts, parsley, and nutmeg. Mix well.
10.Drain manicotti; stuff cheese mixture into shells.
11.Place stuffed shells in a greased 13 x 9 inch baking dish.
12.Pour sauce over shells.
13.Cover and bake for 30 minutes. Uncover and bake for 15-20 minutes longer or until bubbly.
14.Let stand for 10 minutes before serving.
