Ingredients

3 tablespoons extra virgin olive oil
1 medium onion , finely chopped
2 garlic cloves , minced
1 can tomato paste
1 can crushed tomatoes
2 1/2 cups water
1 tablespoon italian seasoning
salt and pepper
1 tablespoon sugar ( optional )
2 cups water
1 cup arborio rice
1 container part-skim ricotta cheese
1 cup shredded low-moisture part-skim mozzarella cheese
1/4 cup parmesan cheese
1/4 cup romano cheese
1/4 teaspoon garlic powder
1 egg , slightly beaten
1/2 teaspoon salt
1/8 teaspoon black pepper
4 large red bell peppers
fresh parsley
Stuffed peppers are a classic comfort food, and this recipe takes them to the next level with a super creamy, cheesy filling. Instructions

1.Preheat the oven to 375°F.
2.In a large saucepan, heat olive oil over medium heat. Add onion and garlic and cook until onions are translucent.
3.Add tomato paste, crushed tomatoes, 2 1/2 cups water, Italian seasoning, and salt and pepper to the saucepan. Stir and let simmer for 20 minutes.
4.While the sauce is simmering, in another saucepan, boil 2 cups of water. Add arborio rice and cook for 10-12 minutes, or until done.
5.Once the rice is done, add it to a mixing bowl along with ricotta cheese, shredded mozzarella cheese, parmesan cheese, romano cheese, garlic powder, egg, salt, and pepper. Mix well.
6.Cut the tops off of the red bell peppers and remove the seeds and membranes.
7.Fill each pepper with the rice and cheese mixture. Press the mixture down into the peppers tightly.
8.Pour the tomato sauce into a baking dish and lay the stuffed peppers on top of the sauce.
9.Bake for 50-60 minutes, or until the peppers are tender and the tops are golden brown.
10.Serve hot with fresh parsley on top.
