2 cups dry fava beans
salt
1 lemon , juiced
1 teaspoon garlic powder
1/4 cup minced Italian parsley
1 pinch cayenne pepper
1 small cucumber , peeled and diced
1 medium tomatoes , diced
1/4 cup sliced green onion
1/2 cup crumbled feta cheese
2 tablespoons extra virgin olive oil
4 pieces warm grilled pita bread , tandoori nan or 4 pieces other flat bread
Foul Mudammas, also known as fool, is a traditional Middle Eastern dish that is popular in countries like Egypt, Lebanon, and Yemen. Instructions

1.Soak the fava beans in water overnight.
2.Rinse and drain the beans, then add water to cover and bring to a boil.
3.Reduce the heat and simmer for about an hour until the beans are soft but not mushy.
4.Drain most of the water and season with salt, lemon juice, garlic powder, half of the parsley, and cayenne pepper.
5.Serve the beans in a large bowl and top with cucumber, tomatoes, green onions, feta cheese, olive oil, and remaining parsley.
6.Serve with warm pita bread.
