Ingredients

4 whole garlic heads
2 teaspoons olive oil
2 cups minced shallots

2 tablespoons all-purpose flour
2 tablespoons chopped fresh thyme
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 lbs russet potatoes , thinly sliced
cooking spray
1/2 cup grated parmesan cheese

Instructions

5.Spray the bottom of a 9x13-inch baking dish with cooking spray. Arrange a layer of potatoes on the bottom of the pan, then a layer of the mushroom and garlic mixture, a layer of grated cheese, followed by another layer of potatoes. Repeat the layers until all of the potatoes and mushroom mixture have been used, ending with a layer of potatoes on top. Pour the cream mixture over the potatoes, then sprinkle the remaining cheese on top.
6.Bake in preheated oven until the potatoes are tender and the cheese is golden brown, about 1 hour. Let stand for 10 minutes before serving.
