Ingredients

5 medium free-range eggs
225 g good quality sausage meat
2 tablespoons chopped fresh herbs ( a mix of parsley , sage and thyme )
1 tablespoon chopped spring onion , green onion
1/2 teaspoon mace or 1/2 teaspoon nutmeg
1/4 teaspoon mixed spice ( optional )
2 tablespoons plain flour
75 g white breadcrumbs
salt and pepper
oil ( for frying )
Scotch Eggs are a traditional British dish that has been enjoyed since the 18th century. It's a snack that became popular in picnics and outdoor events. The dish consists of a boiled egg covered in sausage meat, coated in breadcrumbs and deep-fried. Instructions

1.In a pot, boil 4 eggs for 5 minutes, then put in cold water until cool to touch. Peel the boiled eggs.
2.In a bowl, mix the sausage meat, herbs, spring onion, mace or nutmeg, and mixed spice (optional). Add salt and pepper to taste.
3.Divide into 4 portions and shape each portion around a boiled egg. Cover evenly.
4.Put plain flour, breadcrumbs, and an egg whisked in a separate bowl. Dip the sausage-covered egg in flour, then the egg and roll in breadcrumbs. Repeat the egg and breadcrumbs process for all.
5.Heat vegetable oil in a pan and shallow-fry the eggs for about 6-8 minutes until golden-brown. Drain the excess oil on kitchen paper before cutting into halves and serving.
