Ingredients

24 -26 gyoza skins ( round )
3 ounces ground pork ( or ground chicken , refer to note below )
1/4 cup finely shredded napa cabbage
1 teaspoon finely chopped ginger
1 tablespoon rice wine
1 tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon white pepper
1 tablespoon finely chopped scallion
1 teaspoon sesame oil
1/2 teaspoon sugar
1 tablespoon chicken stock
1 tablespoon peanut oil ( approximate quantity )
2/3 cup water
3 tablespoons soy sauce
2 tablespoons rice vinegar or 2 tablespoons balsamic vinegar
1 teaspoon sugar ( or to taste )
1/4 - 1/2 teaspoon sesame oil ( to taste )
1 1/2 teaspoons minced ginger
1/2 tablespoon minced scallion
1 1/2 teaspoons minced garlic
1 teaspoon hot chili oil

Instructions

1.In a large bowl, combine ground pork (or chicken), napa cabbage, ginger, rice wine, soy sauce, salt, pepper, scallions, sesame oil, sugar, and chicken stock. Mix well.
2.Take a gyoza skin, place a teaspoonful of meat filling in the center. Brush water on the skin's edge. Fold the skin in half and seal the edges. Repeat until all skins and filling are used.
3.Heat oil in a non-stick skillet over high heat. Arrange the dumplings in the pan, flat side down. Cook for 2 minutes or until the bottoms are light brown.
4.Pour water into the pan until the bottom is 1/3 covered with water. Reduce heat to medium heat, cover pan and simmer for approximately 8 to 10 minutes or until the water has evaporated and the filling is fully cooked.
5.In a separate bowl, combine soy sauce, rice vinegar or balsamic vinegar, sugar, sesame oil, minced ginger, minced scallions, minced garlic, and hot chili oil. Mix well and serve as a dipping sauce for the pot stickers.
