Ingredients

3/4 cup semolina , fine
3/4 tablespoon bengal gram flour ( besan )
1/4 teaspoon turmeric powder
3/4 cup sour thick curds
1/2 teaspoon baking soda
1 1/2 tablespoons cooking oil
1 teaspoon salt
1/4 teaspoon red chili powder
oil , for greasing
2 green chilies , paste of
1 inch ginger , paste of
2 tablespoons oil
1 teaspoon mustard seeds
10 -12 curry leaves
2 green chilies , slit
1/2 teaspoon asafoetida powder
2 tablespoons grated coconut , for garnishing
2 tablespoons chopped coriander leaves , for garnishing
Instant Semolina Dokhla is a popular Gujarati snack. Dokhla is a type of steamed cake made from fermented batter of rice and besan. However, this is an instant recipe and does not require fermenting time. This appetizer is perfect for parties, potlucks, and even as a tea-time snack. With its fluffy texture and flavorful tempering, it is sure to impress your guests and leave them craving more.

Instructions

1.In a mixing bowl, take semolina, besan, salt, and turmeric powder. Mix with a spoon.
2.Add green chili paste, ginger paste, sour curd. Whisk until the mixture is lump-free. Add 2-3 tbsp water if required to get a thick, pouring consistency.
3.Heat a steamer or kadhai with a stand and 2 cups of water.
4.Grease a plate with oil. Add baking soda to the batter, whisk it well again, and pour the batter immediately into the greased plate. Place the plate inside the steamer and cover it with a lid. Steam for 10-12 minutes on medium flame.
5.After 10-12 mins of steaming, insert a knife or toothpick in the center of dhokla. If it comes out clean, dhokla is ready. Turn off the flame and let it cool for 2-3 minutes.
6.Once cooled, take out the plate from the steamer. And cut dhokla into equal square pieces.
7.For the tempering, in a kadhai, heat oil. Add mustard seeds, let them splutter. Add green chillies, curry leaves, asafoetida powder. Mix well and pour it over the dhokla. Garnish with grated coconut and chopped coriander leaves.
