Ingredients

1 cup boiling water
2 tablespoons dried rosemary , divided
1 tablespoon honey
1 package active dry yeast
1 teaspoon salt
5 teaspoons olive oil
1 cup of cooked mashed potatoes , cooled
2 1/2 cups flour , apprx
3 tablespoons parmesan cheese , grated
1/2 cup minced onion

Instructions

1.In a mixing bowl, add boiling water, 1 tablespoon of rosemary, honey, yeast, salt and 4 teaspoons of olive oil and mix well.
2.Add mashed potatoes and flour gradually while mixing the dough until it starts to form a dough.
3.Knead the dough on a floured surface to make it smooth and elastic, Place it in a greased bowl and let it rise 30 minutes.
4.Transfer the dough to a greased 9" by 13" baking pan and spread it out evenly.
5.Cover the dough with remaining 1 teaspoon of rosemary, minced onion, and grated parmesan cheese.
6.Drizzle with 1 teaspoon of olive oil and let the dough rise for another 30 minutes.
7.Preheat the oven to 425°F. Bake the focaccia for 20-25 minutes. Optionally, brush the top with additional olive oil before serving.
