Ingredients

2 1/2 teaspoons active dry yeast
2/3 cup warm water
1 cup unbleached flour
1/2 cup water
1/3 cup dry white wine
1/3 cup extra-virgin olive oil , plus about 2 tablespoons for drizzling
2 1/2 cups unbleached flour , plus 2 teaspoons unbleached flour plus 1 to 2 tablespoons as needed
2 teaspoons coarse salt , plus 1/2 3/4 to 1 teaspoon for sprinkling ( I used Sicilian salt for sprinkling )

Instructions

1.In a small bowl or measuring cup, dissolve the yeast in the warm water.
2.In a large bowl, combine the 1 cup of unbleached flour, 1/2 cup water, dry white wine, 1/3 cup extra-virgin olive oil, and the yeast mixture.
3.Add the 2 1/2 cups of unbleached flour and 2 teaspoons of coarse salt, mixing until the dough comes together.
4.Knead the dough on a lightly floured surface for 5 minutes, adding additional flour as needed to prevent sticking.
5.Cover the dough and let it rise in a warm place for 1 hour.
6.Preheat the oven to 450 degrees F (220 degrees C) and drizzle a baking sheet with olive oil.
7.Flatten the dough into a round or rectangular shape on the baking sheet, pressing your fingertips into the dough to create dimples.
8.Drizzle the top of the dough with additional olive oil and sprinkle with 1/2 to 3/4 teaspoon of coarse salt (I used Sicilian salt).
9.Bake for 15-20 minutes, or until the top is golden brown.
10.Let the bread cool before serving.
