Instructions

1.In a small bowl, combine yeast, 1/2 cup of water, and a pinch of flour.
2.In a large bowl, mix together the bread flour, salt, and olive oil.
3.Pour the remaining water into the bowl with the flour mixture and add the yeast mixture.
4.Knead the dough for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise for an hour.
5.Preheat oven to 220°C. Grease a 22cm x 34cm baking dish.
6.Roll out the dough and press it evenly into the baking dish.
7.Arrange the gorgonzola, mozzarella, fresh basil leaf, coarse salt, and rosemary on top of the dough.
8.Pour the olive oil over the toppings and bake for 25-30 minutes until the bread is golden brown and the cheese is melted and bubbly.
