250 g ground blanched almonds
250 g flour
250 g soft butter
250 g sugar
300 ml milk
1 vanilla bean ( do n't use extract )
4 egg yolks
100 g sugar
2 tablespoons flour
3 tablespoons icing sugar
100 g slivered almonds , toasted

Instructions

1.Preheat the oven to 180°C (350°F).
2.In a large bowl, mix together the ground almonds, flour, soft butter, and sugar until well combined. Set aside.
3.In a medium saucepan over medium heat, warm the milk and vanilla bean until hot but not boiling. Remove from heat and let cool slightly.
4.In a separate bowl, whisk together the egg yolks, 100g sugar, and 2 tablespoons of flour until smooth. Slowly pour the warm milk mixture into the egg mixture while whisking continuously.
5.Pour the egg and milk mixture into the bowl with the almond mixture and stir until well combined.
6.Pour the batter into a greased and floured 26 cm round cake pan.
7.Sprinkle the toasted slivered almonds over the top of the cake.
8.Bake for 45-50 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
9.Allow to cool on a wire rack for 10 minutes before serving.
