1 small potato , peeled
1 1/2 cups bread flour
1 1/2 cups unbleached all-purpose flour

3 tablespoons extra virgin olive oil , divided use
2 tablespoons freshly snipped rosemary
2 tablespoons freshly grated parmesan cheese ( optional )
2 tablespoons sliced black olives

Instructions
