Ingredients

2 oranges , washed well to remove any sprays and waxes
1 1/2 cups ground almonds
1 cup superfine sugar or 1 cup caster sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon Cointreau liqueur
6 eggs , lightly beaten
confectioners ' sugar , to dust ( gluten-free if needed )

Instructions

1.Preheat the oven to 350°F (180°C). Grease and line the bottom of an 8-inch (20 cm) springform cake tin.
2.Place the washed oranges in a saucepan with enough water to cover, bring to the boil and simmer gently for 2 hours. Top up the water as necessary.
3.Remove the oranges, cut them in half, and remove any pips.
4.Place the oranges in a food processor and blend until smooth.
5.Add in the ground almonds, baking powder, sugar, vanilla extract, Cointreau liqueur and blend to combine.
6.Add the lightly beaten eggs to the mixture and pulse until smooth.
7.Pour the mixture into the prepared cake tin and bake for 50-60 minutes until a skewer inserted in the center comes out clean.
8.Leave the cake to cool in the tin for 10 minutes, then remove and allow to cool completely on a wire rack.
9.Dust the cake with confectioners' sugar before serving.
