These cookies are made with simple ingredients: toasted hazelnuts, egg whites, sugar, salt, and vanilla extract. Despite their name, they are actually quite delicious and have a unique texture that is chewy on the inside and crunchy on the outside. Instructions

1.Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2.Place the toasted hazelnuts in a food processor and pulse until finely ground.
3.In a large bowl, beat the egg whites until stiff peaks form.
4.Gradually add in the sugar, salt and vanilla extract, continuing to beat until well combined.
5.Fold in the ground hazelnuts until a sticky batter forms.
6.Drop spoonfuls of batter onto the prepared baking sheet. Garnish cookies with sliced hazelnuts (optional).
7.Bake for 12-15 minutes, or until golden brown. Cool on a wire rack before serving.
