2 teaspoons Creole seasoning

4 slices cooked bacon , crumbled

This Florida inspired Chicken Wellington is a spin on the classic Beef Wellington dish. The dish takes thin slices of chicken breast and seasons them with Creole seasoning, salt, and pepper before cooking them to a golden brown color. The chicken is then encased in a puff pastry with crumbled bacon and slices of Brie cheese. The pastry is then baked until golden brown and crispy. Instructions

1.Preheat oven to 400°F (200°C).
2.Heat the olive oil in a large skillet over medium heat.
3.Season both sides of the chicken breast halves with the Creole seasoning, salt, and pepper.
4.Add the chicken to the skillet and cook until golden brown, about 3-4 minutes per side.
5.Remove the chicken from the skillet and set aside.
6.On a lightly floured surface, roll out each puff pastry sheet to 1/4-inch thickness.
7.Cut each puff pastry sheet into 2 large circles.
8.Spread the crumbled bacon and sliced Brie cheese onto each circle, leaving a 1/2-inch border.
9.Divide the cooked chicken evenly among the 4 circles.
10.Fold the pastry over the filling and crimp the edges to seal.
11.Place the Wellingtons on a lined baking sheet and brush with egg wash.
12.Bake for 20-25 minutes, or until the pastry is golden brown.
