375 g mixed dried fruit
125 g slivered almonds
200 g glace cherries , finely chopped
1/4 cup plain flour or 1/4 cup gluten-free plain flour
150 g butter
1/2 cup honey
1 egg , lightly beaten
200 g dark chocolate , use a good quality chocolate ( check gluten-free if required for diet )

Instructions

1.Preheat your oven to 160°C (140°C fan-forced).
2.Line a 20 cm square slice tin with baking paper.
3.In a large bowl, combine mixed dried fruit, slivered almonds, glace cherries, and plain flour.
4.In a small saucepan, melt butter and honey together until thoroughly combined.
5.Pour the butter-honey mixture over the fruit mixture and add lightly beaten egg.
6.Mix until all ingredients are well combined.
7.Pour the mixture into the prepared tin and level the top.
8.Bake in the preheated oven for 45-50 minutes or until golden and firm to touch.
9.Remove from the oven and let it cool in the tin.
10.After it has cooled down, melt dark chocolate in a double boiler and spread it over the slice.
11.Let it set in the fridge for 30 minutes before cutting it into bars.
